Thai Fried Rice – recipe

Thai fried rice or “Thai phat khao” is one of the widespread dishes of Thailand. In Thailand, rice means ‘khao’ & phat means ‘stir-fried’. It isn’t similar to Chinese Fried Rice. Take a dip into this recipe & taste the difference.

Ingredients:

  • 2 cups boiled basmati rice
  • 2 tbsp chopped onions
  • 1 tsp chopped green chilies
  • 1½ tbsp red curry paste
  • 2-3 tbsp tomato ketchup
  • 2 tbsp thin soya sauce
  • 2 tbsp vinegar
  • Sugar
  • 1 cucumber and 2 tomato diced
  • 3 tbsp chopped spring onions
  • 2 tbsp chopped coriander leaves
  • 4 tbsp oil
  • Salt and pepper to taste
  • ½ tsp ajinomoto powder

Method:

Heat oil & sauté onions for 2-3 minutes. Add chilies, red curry paste, and sauté for 2 minutes. Add tomato ketchup, soya sauce, vinegar and sauté for 1 minute. Add rice, stir fry properly. Add cucumber, tomatoes, salt, pepper, ajinomoto, spring onion and coriander. Stir for a minute. Sprinkle coriander leaves and serve hot.

Red Curry paste: Mix 1 large onion, 1 tbsp garlic, 6-8 green chilies, 1½ cup coriander leaves, ¼ tsp turmeric powder, ½ tsp black pepper powder, 1 tbsp ginger, rind of 1 lime, 1 tsp cumin powder, 1 tbsp coriander powder, 3 tbsp oil (little warm), ½ tsp salt and 2 tbsp lemon juice. Blend all the ingredients in a mixer for a smooth paste.
